I was planning on making something a bit healthier today but stumbled upon picture of a banoffee pie I made a few months ago and decided to do that instead, woops! I promise my next Sunday Pleasures post will be something lighter! But back to the pie – it tastes amazing! It’s not as quick as the other recipes I’ve shared with you, but its yummy and worth it!
- 100g of butter (melted)
- 250g of digestive biscuits (these have to be crushed)
- 100g dark brown soft sugar
- 150g of butter
- 1 can of condensed milk
For the top:
- 4 small bananas
- 300ml whipping cream
- grated chocolate
♥ Put the digestive biscuit crumbs into a bowl, add the melted butter and mix well. Spoon the crumbs into a base for the caramel.
♥ Place the butter and brown sugar into a non-stick sauce pan and stir over low heat until the sugar has dissolved. Add the condensed milk and let it boil for about a minute. Remove when it gets to a caramel-like colour.
♥ Spread the caramel over the base and let it cool for about 10 mins. When cooled, place it in the fridge to chill for about 1h30.
♥ Remove from the fridge and lift the pie from the tin. Add the bananas and spoon the whipped cream on top. Sprinkle with chocolate
All done! Try it out and enjoy – it’s a piece of heaven 🙂
