Sunday Pleasures: Banoffee Pie

banoffeepieI was planning on making something a bit healthier today but stumbled upon picture of a banoffee pie I made a few months ago and decided to do that instead, woops! I promise my next Sunday Pleasures post will be something lighter! But back to the pie – it tastes amazing! It’s not as quick as the other recipes I’ve shared with you, but its yummy and worth it!

Ingredients:

Base:

  • 100g of butter (melted)
  • 250g of digestive biscuits (these have to be crushed)

Caramel:

  • 100g dark brown soft sugar
  • 150g of butter
  • 1 can of condensed milk

For the top:

  • 4 small bananas
  • 300ml whipping cream
  • grated chocolate

Directions:

♥ Put the digestive biscuit crumbs into a bowl, add the melted butter and mix well. Spoon the crumbs into a base for the caramel.

♥ Place the butter and brown sugar into a non-stick sauce pan and stir over low heat until the sugar has dissolved. Add the condensed milk and let it boil for about a minute. Remove when it gets to a caramel-like colour.

♥ Spread the caramel over the base and let it cool for about 10 mins. When cooled, place it in the fridge to chill for about  1h30.

♥ Remove from the fridge and lift the pie from the tin. Add the bananas and spoon the whipped cream on top. Sprinkle with chocolate
