What’s for dinner?

Today’s post is all about food – yum! ♥

So I had some friends over for dinner and made one of my favorite dishes: chicken stuffed with feta cheese and spinach. It’s an extremely easy dish to make and takes about 10 minutes to prepare. What I love about it is that after prep, you can put in the oven and do whatever you like for 45 minutes. Yep – that easy! The feta cheese is full of flavour and helps keep the chicken breast moist while cooking. And trust me, the result is amazing!

This is how it’s done:

Ingredients:

  • 6 chicken breasts
  • 150g of Feta cheese (you can stuff them with as much feta cheese as you like, as long as you can still roll the chicken)
  • 200g of spinach
  • salt
  • thyme
  • Olive oil
  • 1/2 a clove of garlic
  • garlic granules

Directions:

  • First, cut every chicken breast in half so it’s thin and easy to roll
  • When that’s done, cook the spinach in 2 table spoons of olive oil, a few pinches of salt and half a clove of garlic for about 5 minutes

  • Next, the feta cheese needs to be cut into thin slices
  • Place the slices of feta cheese and bits of spinach in each chicken breast and roll

  • After that’s done, use garlic granules to sprinkle the rolled chicken breasts. Add 2 pinches of salt and finish off by sprinkling the chicken breasts with thyme.
  • Lastly, pour a bit of olive oil into a dish (about 2 tablespoons) and place the chicken breasts in it

  • And voila! Place it in the oven and do whatever you like for 45 minutes
